In the midst of my depressive phase, I've decided that I hate cooking. Yes, that's right. I hate cooking. Hence, my family has been pancake & waffle-less for a while. I've decided that AlphaGeek should take a hand in making breakfasts on the weekends, and that it should not include take-out type items, no matter how much I love La Madeleine's blackberry-cream cheese croissants.

Anyway, I have decided that to ease AG into breakfast making, I will be purchasing pancake mix. But...I'm not sure which ones actually taste good, and not like a conglomeration of chemicals. Anyone have any recommendations?

I like the President's Choice organic, but I also am okay with Aunt Jemima. My homemade pancake experience has been dissapointingly flat. The only thing I make well from scratch is actual crepes, which don't require fluff.

In my experience (and remember, we have pretty similar husbands), I've had the best results if I just stay completely out of the "man process" and barring truly inedible accepting the outcome gracefully. Honestly, canned biscuits, bacon and scrambled eggs would be a blessing. So would oatmeal and decent coffee. Anything that doesn't require me to do any work for once.

Personally, if I was going to pick a battle for pancakes, I would want real maple syrup. But I grew up in maple syrup country.

Interesting side note however, my 7 year old can operate the waffle iron with minimal supervision.

PS. I also hate cooking but have for years and years. I just loathe the repetition. Too bad I like eating so much.
I get the Hungry Jack ones that you just mix with water for the odd occasion when I can talk him into cooking for us. They're surprisingly good. For myself, I've been known to pre-mix batches of the dry ingredients to my favorite recipe so that I can save a few steps when I'm actually cooking.
Bob's Red Mill makes one. It has buttermilk powder in it, so you wouldn't have to mess with having buttermilk on hand. And it won't have scary ingredients. I imagine you would just add egg, oil, and water.

I have made my own in the past, but I can't remember the recipe. But I did use buttermilk powder, which made it easy-peasy. Here's one I just found - you could play around with the ingredients a bit if you wanted. http://www.recipesource.com/misc/mixes/buttermilk-pancake1.html
I like hungry Jack for pancakes (and its super easy to do with kids while you let Mama sleep in). If you look most boxes have waffle directions too. But I usually make that yeast waffle recipe that you gave me the night before and then Sailor throws together waffles in the morning.
does using Bisquick count? I love that stuff. The recipe is on the box and it means he has to crack a few eggs, bu tit is basically a no-brainer.
wookie - too true about both the husband's and the maple syrup. I like Grade B myself. I will try to accept whatever comes off the griddle, but I can't make any promises. My from-scratch pancakes are pretty good.

rommie - interesting idea...I may have to look into that if this venture is a complete failure.

I think you'll find bisquick is closer to "real" pancakes. I dislike how thin the just add water ones are..

I think you'll find bisquick is closer to "real" pancakes. I dislike how thin the just add water ones are.. See, I found the opposite... my bisquick ones were like hockey pucks, and my just add water ones were nice and fluffy. And my from scratch pancakes were dense and tasted like paste.

My house is apparently the anti-pancake universe, where everything you thought to be true about pancakes is in reverse!!! Mwha ha ha ha ha!
I think some of the discrepancies in pancake mix may stem from the fact that they may have been on the shelf too long - I've noticed that baking powder really loses it's rising power if it's not used right away. I've read that it's better to use it within six months of opening it. Hmmmm. That's something to keep in mind when I buy the mix.

When AlphaGeek made pancakes in the past, he mixed the batter until it was completely smooth. It was thin and drippy. Not only did it start out making the flattest pancakes in the universe, but then he went and actually pressed down on them with the spatula! He said it was to make them cook faster, but I went apoplectic with outrage and shooed him away from the stove. He was never allowed to make pancakes again, and my whole family made fun of him. Ah, good times!

Are you sure we're not married to the same guy? Mine does this with french toast as well, which makes me twitch.

Seriously though... crappy pancakes are not rage-worthy. Unlearn control you must... If you want him to cook breakfast, you are going to have to breathe deep and not be in the kitchen.
Do you really want pancakes? Does your family really need them? It sound like you should just say "hey honey I'm going to take today to lie in, if you could get the kids some cereal that would be great... or if you feel like it there is pancake mix in the cupboard."

Sleeping or reading in will keep you from going panckaepocalypse in the kitchen and the kids will be fed either way. Just a thought.

Also on Saturdays Mo (age 7) gets cereal for himself and Max while they watch Nick Jr. Then Sailor and I laze in bed until 9 or 10 and Sailor gets up with the kids while I nap for an hour or so. It makes for a great morning. And don't forget the morning nookie.
Does anyone ever really need pancakes? I say no. However, my kids love them. And my husband's version of providing breakfast on the weekends involves trips to bakeries and Starbucks that are needlessly expensive. Yes, they could just do cereal but they do that like, every day during the week. Little B will get cereal for himself and his sister every morning before school. It's nice to treat them on the weekends...I just don't want to have to do it myself every time like usual.

But you and wookie are totally right...I need to step away from the kitchen. Somehow. I think some jedi mind control techniques would come in really handy though.
